I'm trying to make the note sent out by the customer to include his email address, if the receiver wants to answer without going through order, etc.
Is there an easy way of accomplishing this (perhaps nVelocity?) or I need to set a new field in the invoice to grab the customer's email address?

What you want would probably be order.BillToEmail or customer.Email
You can basically use anything for the order or customer object.
