Removing Title

We have been trying to remove the automatic title tag generation in the category grid pages so that we can add a completely custom tag via the Head section for each category. We are able to remove the generation of the title, but the title tags remain in the code, leaving us with two sets of title tags. How can we entirely remove the automatic generation of these tags?
