soliciting paypal, google checkout and gateway advice

I am pondering the payments issue. Currently we do it all cc offline as the ship totals are often different from what is originally ordered. Also I do paypal but I just send them an invoice after they place the order.......I see lots, and lots, of posts about problems with paypal, I looks like you can set it up a couple ways? ... google? never used it. On line gateway? I like to here from people and just see of there is any consensus on what works and what to avoid. Thanks for any input.
