AbleCommerce test Gateway - Authorize & Capture

We use AbleCommerce ShoppingCart v.7.04

Let's imagine the following situation:
- The gateway is set to AbleCommerce Test Gateway
- The Authorization is set to: Authorize & Capture
- A user orders something
- The payment is first Authorized and then Captured
- The payment status is Paid

The question is:
Where do these funds go to?
Can we see anywhere these money?
Are money really taken from the credit card?

AbleCommerce Test gateway is only to help you do some testing and allows you to place order with payments authorized & captured. It doesn't captures any money at real time. All it does is to set payment status according to the settings. For example in your case upon order completion, it marked the requested payment as authorized first and then captured. But no real time transaction was made against that amount and your customer card was never charged.
