I need to process payments outside the storefront

We have a point of sale system that runs our business. We also have an online store where customers can buy wash books, gift cards and membership plans. In order for us to activate our wash books (ticket books of prepaid software) we need to ring them up and pay for them within our POS system, which negates the need to process the payments in our online store.

As the customers are checking out, do I have to process the sale thru our Google or Paypal gateway? Can't I just collect the credit card information (number, expiration date and csv) so I can then turn to our POS system and ring the sale.

How would I do this?

You can do that by setting up the charge card payment methods to not use a gateway and enable credit card number storage on the site. You won't have the card security code, though. That is not stored.
