Hello,
The hosting company of our "AbleCommerce 7.0.7 build 14600" is going upgrade our server from Win2003 IIS6 to Win2008 IIS7, and we also has the choice to upgrade it to Windows 2012/IIS 8.
What we need to do to ensure that our website will continue working normally ? What are the changes we need to perform on website configuration level ?

It would be safer to upgrade to Windows 2008/IIS 7 since we are certain that this older version of AbleCommerce will work with this server environment. It's hard to know if anything will break since we don't know the specifics of your AC install on the 2003/IIS6 server, however, these documents may be useful -
Here are the system requirements for version 7 - http://help.ablecommerce.com/index.htm# ... sp.net.htm
Make sure that the server has the correct version of Asp.Net to match your installation, or vice-versa, make sure that you upgrade AC's asp.net version to match the server.
Also, be mindful of the Special Installation note concerning Integrated Pipeline mode. You may need to check your web.config file to see which one is currently in use.
If you run into errors after upgrading, make sure you have the original install files on hand. You will see a folder \install\Framework\ and 3 sub-folders \NET20\, \NET35\, and NET 40. Make sure that you are using the correct web.config and DLL's for the version of Asp.Net on the server.
Now, I don't know if your host is actually upgrading the OS on the same server, or if they are planning to move you to a new server. If the site is actually going to be moved, then we have a FAQ which describes the steps to do that - http://help.ablecommerce.com/index.htm# ... ation_.htm
I highly recommend that the host follows these steps in case of a move to new server. Otherwise, it might be difficult to get things running again.

AC7 supports Asp.Net 2.0 through 4.0, depending on which build you are using. I had given some info with regards to the system requirements and special installation notes with IIS in my above post.
