Is it possible to weight restrict a "vary-by-cost" shipping method? With a little custom code?

I'm not really sure what you are trying to accomplish. We do have a "Vary-by-Weight" shipping method.

Maybe if you explain with an example, I can try provide a better answer for you.

Hi Katie,

I have a shipping method of the type, "vary by cost." I want to make items above a specified "max weight" ineligible for that ship method, similar to how there are max/min weight restrictions for integrated carriers.

I'm sure it could be done with customization, but if you are looking for a solution that doesn't require custom code, then I would suggest that you use a different Warehouse for these items that cannot be shipped with your "vary by cost" method.
