Hi,
We see that the default for shipping is all countries ON. Is there a way to turn off some ( most ) of the countries without deleting them. It looks like you have to delete them.

We would like to rebuild them later but will need to put in the correct shipping charges -- we are getting orders now to Europe with standard shipping ... If we need to, we can just delete them 1x1.

All you need to do is create a shipping zone that includes the countries you want to support for shipping. Then set your shipping methods to only ship to those zones. Check the Configure -> Shipping -> Ship Zones menu to build your zone.
