The XML SiteMap tool outputs the following three files:
SiteMap.xml
SiteMap.xml.gz
SiteMapap.xml
What are each of these for and which is best to upload to Google?
Thanks.

I don't know what sitemapap.xml is, looks like a typo to me. You can change the file name, so that must have been an error on the admin at one point in time.
The Sitemap standard only officially recognizes sitemap.xml and sitemap.xml.gz.
I do google uploads all the time, sitemap.xml works just fine. the .gz is compressed format and only really necessary if your sitemap takes forever to upload.
I have 22,000+ items I upload and it takes about 60 seconds using the regular sitemap.xml file.
Search google.com for "Google Webmaster Tools" and you'll find how to use it in Google.
