Coupons in Email Notification

I setup a coupon but it keeps disappearing on the order notification. It shows throughout the transaction up to the picking area but it disappears once it gets processed. Is there something I need to add in the email notification.
We use the Email notification as a picking slip so the people that are picking the order sometimes need to know if there's an item that needs to be added to an order based on the coupon name/description.
