Can I set the store up to authorize only and capture later.

If I do this if I void the order does it release the hold on an authorize?

Yes, this is the default setting for Authorization Mode.
If I do this if I void the order does it release the hold on an authorize?
"Void Authorization" is a gateway specific feature. So, it depends on which one you are using.
