Taxable in Some states and Not in Others

We have some products that need to be taxed in Mass but Not taxed in New York.
Can it be done?

sure no problem. You mark the products as taxable or not, then you setup your tax zone for the states you need to tax.

So if I had Item A, and I mark it Taxable. Then what would I do to only have that Item Taxable when purchased by someone in Mass (and not any other state).

Then I have Item B which should only be taxed when someone in New York buys it (and not in Mass or any other state)

You have to assign the product a specific tax code. Each tax code contains tax rules. So when define a tax rule with state information for your tax codes and assign respective tax codes to the products.
