I apologize if this has been addressed, I did a quick search and did not spot anything. I have a product set to two pieces. A customer just ordered the last two, but it is still allowing orders. I do not have Allow Backorders checked. Is a product not removed until and order is finalized? If this is the case, is there something I can change to have products removed as soon as the order is placed? Otherwise for low quantity remaining items I may have problems.

Quantity is updated upon shipping.

This poses quite a problem, because as soon as their card is authorized it is their merchandise, in my mind, whether is has been shipped or not. I could get several more orders for this item between now and the time it is shipped. I am not great with all this stuff, I am just a merchant, but is there anything I can edit that would remove the item as soon as the order is submitted and issued and order number.

See Configure >> Order Statuses in Admin.
You can choose when to de-stock; we do the same - de-stock on Order submitted and re-stock if the Order gets cancelled later.
