Meta in Able. SEO advice?

Our SEO consultant has told us that we need to add a block of meta tags(keywords and description) to our site, and remove any extra meta tags from the system. We have already put meta tags in the HTML HEAD section of every category on the site which are relevant to the content in the categories.
Does anyone here know the best course of action to take? Do we remove relevant meta information in place of more general meta? Do we leave both sets and hope they work together? Does meta data even matter to search engines any more?

Most search engines do not look at meta data any more.

Your website is fine. Most search engines try to only look at data that users will see anyways. More information you have they more they see.

Sign up for Google Analytics and Google webmasters. Gives you a good idea at what Google dose with your site.

In other words, if it isn't broken don't mess with it. In the case of Firefold, their presence is strong and they receive a solid amount of traffic each day. Risking a reduction in that traffic because of an unexpected meta tag result is not necessarily a great idea.

Now if there's a specific page or specific need, that's a different story. If a certain product is in the gutter SEO-wise, then tweaking meta tags can/might help and won't damage an already-poor page rank. Just don't change the whole site trying to fix SEO for a few difficult-to-rank products.
