Organization of Category and manufacturer

Forgive me if this is a stupid question but we are new to Ablecommerce (oscommerce convert).
Our current cart is organized by manufacturer, not category. We would like to offer both types of browsing , by category and by manufacturer. I realize the default cart from Able is set up to do it by category with a tag for manufacturer. I was wandering if we can switch this label so we can enter by manufacturer and tag the category. Thought there may be some set up function for this or would we have to have somebody program the code to reverse the titles.

Thanks for any input. We are getting ready to start adding products over to the new cart and want to get it right at the start.
