Is there some place to access informtion how to create your own new templates from scratch? I saw the brief thing in the online doc, but it didn't go into much detail.

I'd also be interested in reading about creating static pages completely separate from the storefront and instituting a custom navigation system (independent of catalogs).

Regarding adding new pages either you can create a new top level page or can use webpage feature of AbleCommerce
