I know you can add items to an order after it is placed but I'm not sure how you would charge the customer for that. Do you have to create a separate order or can you process it as part of an order adjustment, say?
As an alternate example, let's say a customer calls in after the order is placed to change the shipping method from standard to express. Obviously, the changes must be made to the original order so the vendors get the appropriate information. But how would you charge the customer for the extra cost? Would you generate an additional "order" for the extra cost?

There is an order item called "Charge" that you can add to an order in the order, edit order items, select Charge from the dropdown for item type. You would have to process the additional charge on the credit card manually under Payments, Add a new payment
