1. Is it possible to "Allow backorders" for a product, but also show the quantity in stock on the corresponding product page? Basically this information would be so that the customer knows what they can have shipped now and what they will have to wait for.

When the Allow Backorders option is checked, then we will hide the quantity available because, as the merchant, you are saying that inventory "limits" are not applicable. If you do not allow backorders, then the stock quantity will be shown automatically. You can also use the Availability Date option so customers will know when the next expected shipment will be in.
